What is a Culinary Spice Kit?
It is pre-measured, individual packages of pure and natural spices boxed together with the recipe and directions to prepare International recipes in your own kitchen.
Why aren’t the spices just blended together?
Adding the spices individually lets you experience and learn about the spices as you cook. You can make adjustments for spices or flavors you may not care for. And you can see the quality and purity of the ingredients. Besides, you lose the beautiful colors and textures in a blend and end up with a mystery brownish grey powder, usually full of salts and fillers.
Where can I buy Pursuit of Spice Culinary Spice Kits?
Do I use all the Spice Kit packets for one dish?
Yes for the authentic flavor, these dishes use all the spice, except the French Herbes de Provence which is enough for 2 recipes. But if you have a preference on a specific spice you can reduce or eliminate the spices and ingredients to your own taste.
How can I make the Spice Kits less spicy?
You can reduce or eliminate the Indian Chili powder in the Indian Curry and Moroccan Tagine Culinary Spice Kit recipes; the Cayenne in the Ethiopian Doro Wat Culinary Spice Kit; and you can also reduce, eliminate or replace the Green Chilies in the Indian Curry Culinary Spice Kit.
How can I make the Spice Kits more spicy?
To make the Indian Curry Culinary Spice Kit hotter, add more Green Chilies or a hotter Chili like a Serrano, Birds Eye or Thai. For unbelievable heat, try a Scotch Bonnet or Habanero, but you’d better like it sweltering hot and have some yogurt on hand to cool your mouth!
Can I use chicken, beef, pork, etc. instead of the suggested meat in the Spice Kit recipe?
Yes, I’d encourage you to experiment with the ingredients and cooking techniques to make them your own. Just follow the recommenced cooking temperatures in your basic cook book to insure your protein is thoroughly cooked.

Can I use the Spice Kits as a rub for the grill?
Yes, the Ethiopian Doro Wat and Moroccan Tagine Culinary Spice Kits would make great rubs for the grill. Combine the Spice KIt then rub on the meat, marinade up to over night with the garlic, onions, ginger and 1 table spoon of Olive Oil, then grill to desired temperature. For Fish, drizzle 1 Tbs Olive Oil on a piece of foil large enough to seal around the entire filet, place the filet on the oil, sprinkle on the Spice Kit, garlic, onions, ginger and 1 Tbs of Olive Oil, seal the foil into a pouch, marinade for up to 30 minutes, then place the pouch on the grill for 10 minutes for a 1 inch thick filet. Let the meat or fish rest 5 minutes before cutting or serving to retain the juices.
What does “dry cooking” the onions in the Ethiopian Doro Wat Spice Kit Recipe mean and will they burn?
Using low heat and stirring, the onions will steam from their own moisture. They shouldn’t burn, but if they begin to stick to the pan, add 1/2 a tablespoon of water at a time to prevent them from burning.

Yes, the packets contain only pure and natural Spices & Herbs, Cacao nibs and Sesame Seeds.
What are Grains of Paradise in the Moroccan Tagine Culinary Spice Kit?
It’s a West African Spice in the Ginger family. It has a peppery, ginger flavor and is used in brewing several popular beers.
Do I need to grind the whole spices in the Indian Curry Culinary Spice Kit?
No, the Indian Curry is meant to be homestyle cooking, so you use the Spices whole and then just pick them out as you serve. They get soft in the cooking process so biting into them will just give you a burst of it’s flavor.

What is Roux and why do I need it for the Herbes de Provence Culinary Spice Kit recipe?
This is an equal parts mixture of flour and fat. You can use any fat you prefer, Butter, Olive Oil, Vegetable Oil or the natural fat from you cooked meat. Premixing the fat and flour will help keep a smooth consistency to your gravy.
