Mexican Puebla Mole

Whether created in a pinch by 16th century nun’s, the Aztec King Moctezuma or the Mayan Indians, today every woman has her own Mole recipe to pass down. Cacao “The Food of the Gods,” rich red Chimayo Chili’s and toasted Sesame Seeds are the base for the complex flavor of this lovely dish.

The Basic Cooking Technique - the Culinary Spice Kit comes with detailed cooking instructions on the back, but here’s the basics.

A few more steps to this dish, but the result is wonderful.  Marinade the chicken or vegetables while you make an authentic chocolate chile paste and the roasted tomatillo salsa. Combine the paste and salsa then cook down to a luscious thick sauce while the chicken/vegetables roast. Mole sauce can be made the day before then warmed up when needed.
